Summer Salad

Summers in Perth are amazing. The warmer weather is an invitation to get outdoors and catch up with friends at barbeques or the beautiful local beaches, including Cottesloe and Swanbourne. Let this be a catalyst for cooking creatively, while still being healthy. We love experimenting with bright, flavoursome ingredients in our Summer salads and share with you some of our favourite delicious recipes below.

Summer Salad

Quinoa and Grilled Halloumi Salad (15 minutes)

  • Quinoa
  • Halloumi
  • Cucumber
  • Grape Tomatoes
  • Lemon
  • Parsley
  • Salt & Pepper

Method:

  1. Wash and drain Quinoa.
  2. Place Quinoa (1 part quinoa and 2 parts water) in a container in the microwave or saucepan and cook for 10-15 minutes.
  3. Cut halloumi and place in pre-heated frypan (medium heat) and fry until golden on one side and then turn.
  4. Cut tomatoes and cucumber into small pieces.
  5. Combine, stir, season with salt and pepper and squeeze lemon juice.

Zucchini and Feta Salad (10 minutes)

  • Zucchini
  • Feta
  • Herb (basil or mint)
  • Lemon
  • Salt & Pepper

Method:

  1. Use a potato peeler to peel the zucchini.
  2. Cut/break up the feta.
  3. Cut herbs such as basil or mint.
  4. Combine, stir, season with salt and pepper and squeeze lemon juice over.

Broccoli and brown lentil salad (10 minutes)

  • Brown lentils
  • Brocolli
  • Feta
  • Balsamic Vinegar
  • Salt & Pepper

Method:

  1. Cut broccoli into small florets.
  2. Blanche broccoli, by bowling water and pouring it over. Leave for 2-3 minutes to soften.
  3. Drain hot water from the bowl.
  4. Wash and strain brown lentils and pour into the bowl with the broccoli.
  5. Cut or break up feta and stir through.
  6. Add balsamic vinegar, salt and pepper to taste. Parsley to garnish.
